Little is known about the origin of the Paloma, the most popular Tequila-based cocktail in Mexico, though it is loosely linked to the legendary Don Javier Delgado Corona, owner and bartender of La Capilla (“The Chapel”) in the town of Tequila, Mexico. At around 93years of age, Don Javier, who is said to have also created the Batanga or Charro Negro, continues to run his small bar.

Directions
If desired, rim a glass with salt.
Fill the glass with ice and add the Tequila and lime juice.
Top it up with grapefruit juice or soda.

- 60 mL Volando Blanco Tequila
- 10 mL lime juice
- 10 mL agave syrup
- 60 mL grapefruit juice
- Ice
- top with soda water
